Green Smoothie with Coconut and Avocado

Serves 2

  • 1/2 ripe avocado, pitted and peeled
  • 2 small Persian cucumbers, or English cucumbers diced (3/4 cup)
  • 1 cup spinach leaves or kale, torn into bite-size pieces
  • 2 tablespoons coconut oil
  • 1/2 cup water
  • 1/4 cup plain unsweetened coconut milk
  • 1 tablespoon fresh lime juice
  • Pinch sea salt, plus more to taste

Add all ingredients to an upright blender and blend until smooth. Season to taste with sea salt and serve immediately.
