This pumpkin recipe can be a dessert or a smoothie!
2 cups pumpkin, cooked and mashed (or 1 15-oz. can pure pumpkin puree )
1 can full-fat coconut milk
1/2 cup chia seeds
1 Tbsp. coconut sugar
1 Tbsp. vanilla extract
1 Tbsp. cinnamon
2 tsp. pumpkin pie spice – allspice, cloves
1 inch fresh ginger, grated
In a high-speed blender, add coconut milk, pumpkin, sweetener, vanilla, cinnamon, pumpkin pie spice and ginger. Blend for about ten seconds until creamy.
Pour into bowls or mason jars. Allow to set in the fridge 2 hours.
Serve with blackberries, coconut cream or pecans.
