Fava Beans Spread

A fresh, holiday spread. The perfect contribution to any Holiday Potluck!

  • 6 bulbs of garlic minced
  • ¼ cup olive oil
  • 3 cups fava beans – blanched (can substitute edamame)
  • zest from one lemon
  • 3 teaspoons lemon juice
  • ½ cup mint leaves
  • a few stalks of mint chopped  and lemon zest for garnish

Heat the olive oil in a skillet and add the garlic. Allow the garlic to cook for a minute or so until soft but not brown.  Place the fava beans in a food processor. Add the heated oil to the fava beans. Add the lemon zest, lemon juice and mint.

Pulse until pureed with but not smooth.

Sprinkle the chopped mint sprigs and lemon zest on top and serve. Will keep several days in the fridge.
