Green Smoothie with Coconut and Avocado
Serves 2
- 1/2 ripe avocado, pitted and peeled
- 2 small Persian cucumbers, or English cucumbers diced (3/4 cup)
- 1 cup spinach leaves or kale, torn into bite-size pieces
- 2 tablespoons coconut oil
- 1/2 cup water
- 1/4 cup plain unsweetened coconut milk
- 1 tablespoon fresh lime juice
- Pinch sea salt, plus more to taste
Add all ingredients to an upright blender and blend until smooth. Season to taste with sea salt and serve immediately.
